Raw SouthWestern Salad || RAWgust Week 2 Dinner

This week's theme is Latin inspired and as you know we have entered week 2 of our RAWgust challenge! Half way there baby!! For those who aren't familiar with RAWgust please update yourself here.


This is our last and final recipe for RAWgust week 2. A fully loaded southwestern salad made with leafy green lettuce, corn, tomatoes, peppers, avocado, pumpkin seeds, red onions, cilantro and mango! This is going to go perfectly with our homemade avocado cilantro dressing! Mmmmm sabrosa.




Raw SouthWestern Salad



Ingredients


Salad

2 large heads, Leafy green lettuce or Spring mix

1 cup corn (optional)

1/3 cup cherry tomatoes

1/3 cup sweet peppers

1 avocado diced

1/4 cup pumpkin seeds

1/3 cup red onion

1/4 cup cilantro

1 mango diced


Avocado Clianto Dressing

1/2 cup water

1 small avocado, peeled, pitted and chopped

1 cup unsweetened almond milk

1 cup cilantro leaves

4 tablespoons lime juice

2 teaspoon maple syrup

1 clove garlic

1 tbsp cumin

1 tbsp salt



Instructions


For the dressing

Place all ingredients in a blender and process until smooth. Keep leftovers refrigerated for about 3 days.


For the salad

Place a bed of lettuce in a medium bowl. Layer corn, tomatoes, mango, red peppers, avocado, pumpkin seeds, red onions and cilantro on top of the bed of the lettuce, side by side next to each other. Drizzle homemade dressing. serve and enjoy.


Note: Left over ingredients can be stored. You can also use black beans, lentils, chickpeas, and other legumes, they are a crucial source of protein in a plant-based diet. It's possible to include them even without cooking. Soaking legumes until they're soft and rinsing them thoroughly can make the beans safe to eat raw.
