Cauliflower Rice Sushi Roll || Rawgust week 1 Lunch

So Whats Cooking? Good Looking?


We are in week 1 of Rawgust and I've provided several recipes for you to follow! For those who aren't familiar with RAWgust be sure to catch yourself up here.


This week is Asian inspired......How can we have an Asian theme without sushi? This recipe satisfies all my cravings of wanting fish! Its fun, tasty and i know you will enjoy this recipe too!


Lets get Rolling


Cauliflower Rice Sushi Roll


Ingredients

1 carrot shredded

3 Radish sliced

1/2 Red bell pepper sliced

1/2 Cucumber sliced

Sprouts

2 tbsp Tahini

pinch of Hemp hearts


Sweet and Spicy Sauce

2 medjool dates soaked for 1/2 an hour

2 tbsp tahini

2 tbsp ginger minced

2 tsp amino liqids or tamari

1/4 cup veggie broth or more as needed to make creamy

Squeeze of lemon



INSTRUCTIONS


Blend the sauce ingredients, adding more veggie broth if necessary to make creamy.

Gently pulse the cauliflower florets in the food processor until it resembles rice.

Slice the rest of your chosen ingredients and arrange them on two thirds of the nori sheet.

Put a little water in a bowl and place it nearby. Start rolling and once you're almost done, wet your finger and dab the end of the wrap fairly generously to seal it.

Pop the roll into the fridge to let it settle.

Repeat this process until you've used up your ingredients.

RECIPE NOTES Let the sushi roll sit in the fridge for half an hour before slicing. This allows the moisture from the ingredients to soften the nori sheet and seal everything together nicely.
