So Whats Cooking? Good Looking?
When I tell ya, we had a good ole country time this weekend! We were grinnin' like a possum eatin' a sweet tater. Everything was in place. We rented a barn that had the sweetest country kitchen, a beautiful organic garden, a gorgeous bungalow, live farm animals, and we woke up to the fresh scent of cow manure every morning! Now thats country living at it's finest LOL! Other than our Airbnb host having her nose so high in the air she could drown in a rainstorm, it was the perfect get away with my favorite girls. Can't wait for our next trip!
Of course this trip wouldn't be complete without a @PorctiasApron recipe and let me tell ya, by the looks of the video I reckon my girls loved every finger licking bit of it!
Lentil & Beet Pasta with Tofurky Pesto Sausage

Ingredients
3.5 ounces of Red Lentil Beet Pasta
1 tbsp onion powder
1 tbsp oxtail seasoning
1 tbsp garlic powder
1 tsp black pepper
1 tsp oregano
1 tsp Italian seasoning
1 tsp Himalayan pink salt
1/3 cup red bell peppers
1/3 cup yellow onion
1/3 cup green bell peppers
1 pack of artisan Italian spinach pesto sausage
Home Made Cream Sauce
1/2 cup cashews
1 cup oat milk
1/2 cup veggie broth
1/3 cup nutritional yeast
3 cloves garlic
1/3 cup onion
1/4 cup scallions
1/4 liquid aminos
1 tsp onion powder
1 tsp garlic powder
1 tsp Italian seasoning
1 tsp oregano
1 tsp black pepper
2 tbsp apple cider vinegar
herbs ( fresh basil, and oregano )
Instructions
Place all ingredients for homemade cream sauce in a blender. Blend for 3-5 mins. Set aside
Grab a medium pan, set heat to medium. Add oil, when oil is hot enough add onions and peppers, sauté for 2mins then stir in seasonings (onion powder, oxtail seasoning, garlic powder, black pepper, oregano, Italian seasoning and Himalayan pink salt). Cook and stir for 5mins. Add cream sauce cook for an additional 5 mins. If sauce is too thick add oat milk to dilute. Set aside
Cut sausage into small pieces. In a medium frying pan add 3 tbsp of oil. Bring to medium heat, cook sausage on both sides for 7 mins each. Set aside.
In a small pot add 4 cups of water and 1 tbsp on salt. Bring to boil add Pasta. Cook for 7 mins. Drain.
Plating the dish: Add pasta, pour cream sauce over it, place sausage on top serve with side salad and avocado! Eat and Enjoy!
