So Whats Cooking? Good Looking?
'If you like pina colada.....and getting caught in the rain.'
Every time I think of a pina cola I also think of that song, like immediately LOL. Today is a double special day! Not only is it Taco Tuesday, but it's also Cinco de Mayo!!!! Whaaat? Double whammy! It's getting toasty out and pina colada pudding is the perfect treat to cooling things off a little. So, lets whisk off to the tropics without leaving our homes.
Pina Colada Pudding Shots...
Ingredients for 3 layers
layer 1
Chia Pudding
1/4 cup chia seeds
1 cup coconut milk
2 tablespoons agave
1 teaspoon vanilla
Whisk all ingredients together in a medium bowl, cover and set in the fridge overnight or refrigerate for 6 to 7 hours.
layer 2
Pina colada
3/4 cup chopped frozen pineapple
1 teaspoon agave syrup
1 teaspoon vanilla extract
3 ounces white rum
1cup coconut milk
Combine coconut milk, agave, vanilla extract, frozen pineapple and white rum together in a blender, puree until smooth. If mixture is to thick feel free to add extra milk.

Vanilla Pudding
1/3 cup sugar
3 tablespoons cornstarch (Tapioca)
1/8 teaspoon salt
2 cups coconut milk
1 teaspoon vanilla
Bring a large saucepan to low heat, mix the sugar, cornstarch, and salt. Gradually blend milk, stir constantly until thickened. Cook for 3 additional mins stirring occasionally.
Remove pudding from heat and add the vanilla. Let cool for 10mins stirring now and then. Pour the pudding into a large bowl and chill until firm about 2 or 3 hours.
Once ready to serve, layer a shot glass in the order that you'd like. Add garnish of your choice of toppings and enjoy! Also try freezing your left overs in ice pop molds for some wicked good popsicles.
