So What's Cooking? Good Looking?
Making this recipe was so much fun! I had my girl Rosie pull up on me to show a few of her chef skills! Her organic grown herbs took our homemade creamy sauce to the next level! Goooo Rosie! Pasta is one of my weaknesses and I was so happy to come across a pasta so flavorful and vegan. I can't determine which side is the leading star on this plate. The crisp from the bang bang broccoli, the homemade creamy sauce, the shiitake mushrooms that soaked for hours or the Italian spaghetti with herbs? They all taste so good separately and together the flavors melt in your mouth with savoriness! Our tastebuds were so happy this day!
Lets Get Cooking, Good Looking!
Jerk Shiitake Mushrooms
Ingredients
1 1/2 cups of Shiitake mushrooms
1/4 red bell pepper
1/4 green bell pepper
1 garlic clove
1/4 onion
1 tsp onion powerd
1 tsp garlic powder
1 tsp oregano
1 tsp black pepper
2 drops liquid smoke
1/4 cup liquid amino
1tsp jerk seasoning sauce
t tbsp BBQ sauce
1/4 cup oat milk
1/4 cup veggie broth
Instructions
Add liquid smoke, Oat milk, liquid amino, jerk seasoning sauce, BBQ, and veggie broth into a small bowl. After slicing your shiitake mushrooms (if you choose to slice them) add to sauce. let marinate no less than 30 mins.
After 30mis of soaking mushrooms, drain and bring a medium sauce pan to medium heat, add 3 tbsp of oil. once oil is hot add onions, garlic, and peppers to the pan. cook for 3 mins. Add shiitake mushroom cook for an additional 5 mins. Set aside.
Homemade Cream Sauce
1 cup oat milk,
1/2 cup nutritional yeast
1/2 cup cashews
1/3 cup onion
1/4 cup scallion
3 cloves garlic
1/4 cup liquid aminos
1 tsp onion powerd
1 tsp garlic powder
1 tsp oregano
1 tsp black peppe
herbs ( Fresh Basil & oregano)
Instructions
Place all ingredients for homemade cream sauce in a blender. Blend for 3-5 mins. Set aside
Spaghetti with Herbs Pasta
Hands down, this is the best, most flavorful pasta I've made!!
Ingredients
3 cups water
1 package italian spaghetti
3 tbsp olive oil
Instructions
Add 3 cups of water to a medium pot, add olive oil and bring to boil. cook for 12 mins.
Bang Bang Broccoli
I've been craving bang bang shrimp! I thought it was cleaver of me to turn my broccoli florets into some bang bang fun! Pretty amazing if i say so myself.
Ingredients
1 bundle of broccoli broken into florets
1 cups of oat milk
1/2 cup corn starch
Bang Bang Sauce
1 cup mayo
1/2 cup thai chilli
1/2 teas sarahca
honey
1/2 cup
Instructions
In a small bowl, add all ingredient for bang bang sauce, mix together and set aside.
Soak broccoli florets in milk, dip into the bang bang sauce, coat with corn starch and set aside.
Bring a medium frying pan to medium heat add olive oil. once oil is hot add broccoli to the pan, once golden crispy remove from heat. drizzle sauce over broccoli toss for a few seconds in a large bowl. serve and enjoy!
ADD ANY PROTEIN
Here/s a photo of this recipe plated with shrimp as protein. For those who aren't vegan you can add your choice of protein to this dish! Rosie definitely devoured those shrimp!
